It’s the perfect combination of sweet and spicy that will fill you with Christmas cheer. This recipe makes 1 cocktail.
You will need...
For Gingerbread Syrup:
165g granulated sugar
3/4 (5-cm) piece fresh ginger, coarsely chopped
3 whole cloves
2 sticks of cinnamon
28ml Bailey’s Irish Cream
1⁄2 scoop of vanilla ice cream
2 gingerbread cookies (or leftovers from the gingerbread house!)
30ml Gingerbread Syrup
Start by making the Gingerbread Syrup:
1. Simmer water, sugar, ginger, cloves and cinnamon for about 15 minutes, stirring occasionally, until reduced to about 175 ml.
2. Pour the hot syrup through a fine sieve and chill. Leave to stand for 20 minutes before using.
To make one Martini:
3. Dip the rim of the glass in honey and add a crushed ginger cookie around the glass.
4. Fill a cocktail shaker with ice. Add the vodka, ice cream, Bailey’s and gingerbread syrup. Cover and shake vigorously for about 30 seconds until combined and chilled. Strain into a chilled cocktail glass and add a ginger cookie on the side to accompany the drink.
